Starting MMA and i was just curious as to which weight training techniques would train my punching and kicking.

Only plyometrics. Anything else will ruin your power (and stamina).
Plyo is lifting weights as many times as possible in a timed set, then repeating the same repetitions across 3 or 4 sets. I commonly recommend clapping pushups and deep squat jumps, since they can be done anywhere, any time. But you can get creative if you go to a gym.
