i'm a beginner, i can run for maybe a minute at a time at 5.5 on the treadmill..i want to lose about 60 lbs and tone my arms, butt, and stomach...
can someone please help me outline a basic workout/diet.
i'm a vegetarian btw.

First off congratulations on taking the first step towards a new you. I am also a vegetarian and have lost quite a bit of weight.
Here goes.
Exercise
Forget about the running for now 1 minute will not benefit you, try to walk for 30-45 minutes a day 5-6 days a week, Make it part of your routine. If you can't do 30 minutes yet, don't get discouraged, do what you can and make improved time your goal. The best time to walk is in the morning.
You can also start doing body weight exercises, do some push-ups, crunches and bodyweight squats 2-3 times a week, don't do those on consecutive days though.
Diet
A lot of the problem with vegetarian diets is that many of us make poor food choices such as eating fried cheese, quesadillas and well basically bread and cheese. What you want to do is eat at least 6 cups of vegetables a day space them out over breakfast lunch and dinner. You are going to also need protein, what I personally recommend are the Morningstar Farms Chik'n strips, they are not breaded and are completely vegetarian. You are also going to need other options for protein as you want to make sure you have a good source for breakfast lunch and dinner tofu works, or any veggie burger (Grillers, Boca etc.) In between breakfast and lunch and dinner you need to eat snacks. make one of them nuts (no salt added) and berries (no extra sugar) and make the other some kind of fruit. If you are going to eat bread at any time make it whole grain or sourdough and make sure you don't overeat it. DO NOT EAT any white sauces this means no ranch, mayo or alfredo.
